1 16oz can of Mushrooms
1 Stick of Butter
2 T Minced Garlic
1 Bulb fresh Garlic
1 T Worcestershire Sauce
1 4Lb Beef Roast
1) Preheat oven to 425.
2) Using a chopper or blender mince the muchrooms almost into a paste.
3) In a bowl combine mushrooms, stick of butter, minced garlic, and Worcestershire. Beat together into a uniform paste.
4) Peal and put aside cloves from garlic bulbs.
5) Using a knife stab the roast in a grid pattern about every inch and insert a clove or slice of clove into each stab hole.
6) Score the top of the roast with a knife and coat the entire roast with the mushroom/butter mixture.
7) Place roast in 425 degree oven for 10 minutes then reduce oven temperature to 350 degrees until the inside of the roast is 130 degrees on a meat thermometer (about one hour).

Mushroom Garlic Roast Beef
Gorgonzola Cream Sauce with Tomatoes (for Pasta)
1.5 C. Vermouth
2 C. Heavy Cream
1 Wedge Gorgonzola Cheese
3 Tomatoes Pealed, diced, drained
1.5 Tablespoons of Grated Parmesan Cheese
½ Teaspoon fresh ground black pepper
¼ Teaspoon Nutmeg
Pinch of Salt or just salt tomatoes
1) Peal tomatoes by scoring an X on the bottom and immersing it in boiling water for 20 seconds and then immersing it in cold water for 20 seconds. The skin will be easy to remove. Then dice and drain tomatoes.
2) Put Vermouth into a pot and boil until volume is reduced by half.
3) Add Heavy Cream, Tomatoes, Parmesan, Pepper, and nutmeg and bring to a boil.
4) Add Crumbled Gorgonzola lower heat and simmer for 5 minutes.
5) Pour hot over Pasta of your choice.

Happy Candlemas
Well it looks like winter is almost over at least according to the old English poem:
As the light grows longer
The cold grows stronger
If Candlemas be fair and bright
Winter will have another flight
If Candlemas be cloud and rain
Winter will be gone and not come again
A farmer should on Candlemas day
Have half his corn and half his hay
On Candlemas day if thorns hang a drop
You can be sure of a good pea crop
If you haven’t figured it out I am referring to Groundhog day which was originally called Candlemas. This name comes from the day of the year that is set aside for the priests to bless the candles used in the church and is also believed to be the day Jesus was presented to the temple as a baby. So to mark the significance of this day God apparently gives bears, wolves and groundhogs the ability to predict the weather.
So now you can enjoy the spiritual significance of this apparently random day.
